Ingredients
3 fresh pear, cut into cubes
1 bunch rocket
handful of pine nuts
100g goats cheese
1 small lemon
3 generous shakes from balsamic vinegar bottle
1 clove garlic, crushed
Method
Make the dressing by mixing vinegar, juice from the lemon and garlic.
Dry pan roast the pine nuts until brown and aroma begins to emerge. Be careful not to overdo them.
In a large serving bowl tear the rocket into bite size strips and toss with the pear. sprinkle pine nuts and chunks of goats cheeze on top. Drizzle with the dressing and serve.
